Fruity Porridge Bread

Preheat oven at 200C.

You need:
500ml carton natural yogurt
1 large egg
375g porridge oats (use carton from yogurt x2)
2 teaspoons baking soda

Small cup mixed nuts
Small cup dried fruit of your choice (e.g. raisins, cherry, dates)
Maple syrup or Honey x4 tbsp
Cinnamon (ground) 1 tbsp
Mixed spice (ground) 1 tbsp
Vanilla essence 1 tsp

*If you like, keep some nuts and fruit to decorate the top of your loaf.

In you mixing bowl add the yogurt, egg, maple syrup and vanilla essence. Mix well.

Then add oats, baking soda, cinnamon, mixed spice. Mix well until evenly combined.

Add nuts and fruit and fold into your mixture until distrbuted evenly in the mixture.

Lightly grease baking tin or line with greaseproof paper.
Add mixture and gently press into tin. Decorate with extra fruit and nuts if you wish.

Bake centre of the oven for 50 minutes until golden brown.
Remove from oven and remove from tin and allow to cool on wire tray.

This should make 12 slices. Enjoy!
