Courgetti Bolognese

One of my favourite dinners is spaghetti bolognese. It has been ever since I was a child and of course I wasn’t giving it up so here is a healthier option that is just as delicious.

You will need:

  • Low calorie cooking spray
  • Extra lean beef mince 500g
  • 1 can chopped tomatoes.
  • 4tbs tomato puree
  • 300g Passata
  • 1 tap dried mixed herbs.
  • 4 cloves of garlic
  • 1 onion chopped
  • Handful of spinach
  • Salt and ground pepper
  • One courgette

Spray low calorie spray into the pan and add mince, stir fry for 2 minutes until browned, then add garlic and onion and spinach. Stir fry for 1 minute and add chopped tomatoes, puree, passata and dried herbs. Season well and cook for 15 mins.

Courgetti: I use a spiralizer to transform my courgette into fake pasta. It is very easy to use and they are available to buy in most homeware shops. Use one courgette per person. I find the best way to cook it is in the pan, but if you like, you can just add it to your bolognese. Or, if you like to keep them separate, fry them in a little rapeseed oil at a medium heat for a couple of minutes.
