Crust-Free Quiche (Serves 4)

 

You will need:

  • 4 eggs
  • ½ head of broccoli chopped
  • 1 chopped leek
  • Handful of spinach chopped
  • ½ Roast butternut squash.
  • 4 asparagus stems.
  • 100g Feta cheese.

Firstly, I sliced into the butternut squash and roasted it for half an hour at 200.

I chopped up all the veg and placed it into baking dish and roasted for 15 mins with a drizzle of olive oil. I then added the butternut squash to the rest of the veg. in a separate bowl. I beat the 4 eggs with a dash of milk and seasoned with salt and pepper. I added the egg mix to the roasted vegetables and baked for a further 25mins @180 and for the final 5 mins I crumbled the feta over the top. I served it with a side salad and some chicken.
